With its very old vines grown on extremely steep slopes, Priorat is one of the most fascinating areas of Spain. Yet just 20 or so years ago it was a vinous backwater making massive over-ripe, over-oaked wines and full of abandoned vineyards.

Luckily, a few winemakers were able to see the huge potential in these vineyards and since then Priorat has seen astonishing improvement to become one of Spain's foremost regions.

It was inevitable that Torres, one of Spain's biggest yet also most innovative wineries, would look to take advantage of Priorat's unique terroir and in 1996 they did so, investing e3 million to build a new winery and acquire vineyards.

The result, Salmos, is amongst the top tier of Priorat's wines, made from steeply sloping vineyards planted on shale (there is virtually no soil here) that see huge changes between day and night temperatures. Such variation gives the grapes a long ripening period and allows the wine to remain fresh despite its power and richness.

At £18.75 (with a lovely 20% discount), this is the perfect introduction to a uniquely interesting region where wines normally cost at least double.

About the wine

In the glass Salmos is a deep, almost opaque purple. Aromatic and intense on the nose, it offers complex notes of black cherry and plum along with floral and spice hints. This is a full-bodied wine, silky and luxurious, yet it is still fresh on the palate and full of dark, ripe fruit. The finish is all about spice and minerality with a touch of cocoa from the oak. Delicious and elegant, it's tempting to drink now with a decent decant but the smooth tannins and structure suggest that it will age wonderfully for at least the next 5 years.

To make Salmos, the grapes were hand-harvested (nothing else is possible on these steep slopes). The grapes are sorted, pressed and then fermented in stainless steel tanks under controlled temperature before undergoing malolactic fermentation in French oak. Finally the wine is aged in French oak for 14 months before being bottled.

About the winery

Whilst the Torres family have been involved in making wine in Catalunya for over 300 years, it was not until 1870 that the house of Torres was officially established. Today, from the fifth generation, Miguel Torres is at the helm; the principles of innovation and attention to detail continue to be the cornerstones of the house. In 1966, they began planting non-traditional varieties including Cabernet Sauvignon and Chardonnay; whilst in 1970, they began using cold-fermentation to produce fresh and fruity whites, today Torres is known for blending tradition with innovation.

In 1999, the Wine Spectator magazine recognised Torres as The Most Important Winery in Spain and in 2002 Miguel Torres was named Man of the Year by Decanter Magazine. In 2006, Wine Enthusiast Magazine awarded Torres the Best European Winery trophy, and most recently in 2014 Torres was named the World’s Most Admired Wine Brand by Drinks International.

About the vineyard

Salmos is made in the beautiful yet remote region of Priorat. The vineyards, planted on steep slopes of shale (“licorella” stone), undergo extreme changes in temperature between day and night and these natural changes help to both ripen the fruit and yet retain freshness.

About the winemaker

Miguel Torres comes across as a modest man, but one with a quiet authority. He knows his stuff, but wears the knowledge lightly. Back in 1982, when there were problems with the family succession (his father wouldn’t retire and let go of the company), Miguel took a sabbatical year out and went and studied at Montpellier, brushing up his winemaking and viticulture knowledge. When he returned to the company he brought this new knowledge back and applied it.

Today Torres spend €3 million a year on their viticultural and winemaking research, tackling some of the hot topics in wine science. This innovation and drive for quality has seen them established ever more firmly as one of Spain's Leading Houses.

Tracking information will not be available for your shipment until it reaches the regional hub, due to the fact that the shipment is sent via common (temperature controlled) carrier and there is no individual tracking number for the package.

You will however receive a confirmation email indicating that your shipment has left the West Coast warehouse and is en route to your closest regional hub. Your order will say "UPS Label Created", but this label will not be scanned until it reaches the regional hub.

Once the shipment reaches the regional hub, you will be able to track your package (likely 4-5 days after shipping date). At this point, the package is en route to your home/office.
