About the wine

A light shade of powder pink, clear and bright, with abundant bubbles. Subtle, it is fresh and refined, revealing delicate aromas of strawberries, raspberries, blood orange and blackcurrant. The attack is precise and sharp, leading to a subtle, tightly knit palate, featuring a lot of freshness and finesse. Notes of red berries and pear, showing remarkable minerality through chalk and graphite notes. Delicate and fine, it is elegant with a sophisticated finish, like a finely crafted, mineral lace.

Rosé No 8 is a limited edition crafted from grapes picked during the exceptional harvest of 2008 in exclusively Premier and Grand Cru vineyards. The name refers both to the symbolism of the number 8 – of renewal and creation – and to the 8 necessary years of ageing in the cellars before release. Only 14,700 bottles of this limited edition were released.

About the winery

Ayala is one of the 18 original Grandes Marques. The House has always belonged to small, independently owned family structures: it remains true today with the Bollinger family who purchased Ayala in 2005.

Founded in 1860, by Edmond de Ayala, Champagne AYALA is truly a historic Champagne House. 

Champagne Ayala has always had strong ties with the British market, thanks to Fernand de Ayala, Edmond’s brother, who settled in London in 1863. He introduced the brand to several influencers, including the Prince of Wales - future King Edward VII - who, legend has it, enjoyed starting the day with a glass of Ayala. The House received a Royal Warrant in 1908.

About the vineyard

Champagne Ayala is based in Aÿ: one of the most famous Grand Cru villages, having access to the best grapes from the best vineyards in Champagne. The privileged relationship with Champagne Bollinger is also key in helping secure the best grape supply possible.

“Our site is so remarkable that we even had the honour of welcoming Her Majesty The Queen Mother for a visit in 1983, when she pointed out that Ayala was one of her husband’s favourites. And if Ayala is good enough for the Royal Family, it really proves the high quality of our wines…” Hadrien Mouflard, the Managing Director of Champagne Ayala.

About the winemaker

Caroline Latrive is one of only two Women Chef de Cave in the Champagne Region.

Caroline became Chef du Cave in 2011 after working for 5 years at Ayala.  She also worked at Bollinger and Charles Heidsieck. 

Chardonnay is her passion and therefore she is very at home at Ayala where all the blends are predominately chardonnay.  “For me it is a mysterious variety. At the beginning it can be very shy, very timid, just an expression of white fruit, white flowers and minerality. With ageing you can have so many different palates, like patisserie, butternuts, the evolution of the fruit compote, and yet it’s constant in its freshness and elegance. It’s wonderful it gives freshness and purity”

Caroline is Champenoise to the core and she knows the region intimately, being able to recognise precise characteristics from each village and vineyard.

"A superb vintage rosé dedicated to the 2008 harvest, this has an impressively composed style. It's really smooth and supple building excellently and delivering a seamlessly composed impression. The aromas are of fragrant red cherries but in bright, fresh and gently spicy mode. The palate's precisely cut and has supple, tangy acidity underpinning some very pliable fruit flesh, a silky texture and a velvety finish. Impressive length and carefully delivered power here! Drink now and through to 2020+."

“Made exclusively from the 2008 vintage and released at 8 years old, hence the name.  Less than 15000 bottles were made for the world.  It is made up of 51% Chardonnay from Rilly and 49% Pinot Noir from Verzy, Verzenay and Ambonnay.  Dosage is 8gms residual sugar (it had to be!).  With much more mouthfeel and depth than the Rosé Majeur this is a more expressive and more flamboyant wine and it is very good indeed"

"What a Rosé! This is a limited edition Ayala from the spectacular 2008 vintage. Equal parts Pinot Noir and Chardonnay, it was aged on its lees for 7 yrs which contributed to the wine's depth and creaminess. Redolent of strawberries, raspberries and apricots, it displays incredible freshness and balance. Am an instant fan! "

  • Once a shipment arrives at the gateway*, it will be transferred to UPS or Fedex for the final part of its journey

All orders placed before 1pm EST on Wednesday will be shipped out on Friday of the same week. All orders placed after this time will be stored in a temperature controlled warehouse and shipped out the following Friday.

Delivery times, therefore, may take 8-14 days from order date, accounting for fulfillment, 4-5 days shipment to the regional hub, and 1-2 days for local delivery.

If you would like a more expeditious delivery option, please select 2-Day or Overnight Shipping.


Tracking information will not be available for your shipment until it reaches the regional hub, due to the fact that the shipment is sent via common (temperature controlled) carrier and there is no individual tracking number for the package.

You will however receive a confirmation email indicating that your shipment has left the West Coast warehouse and is en route to your closest regional hub. Your order will say "UPS Label Created", but this label will not be scanned until it reaches the regional hub.

Once the shipment reaches the regional hub, you will be able to track your package (likely 4-5 days after shipping date). At this point, the package is en route to your home/office.
