A fascinating wine!

From Hidalgo, one of sherry's greatest names, the Las 30 del Cuadrado Cepas Viejas is something completely different.

A bone dry, unfortified white, the Cuadrado is made using Palomino grapes sourced from a limestone-rich vineyard parcel called Las Cuadrado where the vines are over seventy years old.

Chalky soils play their part in the wine’s character, as does the sea air of Sanlúcar de Barrameda but what really sets the wine apart is its vinification and ageing in oak casks that were previously used for the production of Manzanilla Pasada.

There’s a definite whiff of chalk and sea air on the nose, alongside white flowers and citrus. The palate is full-bodied and incredibly complex with plenty of texture and flavour and a refreshing, salty tang.

Its a wine unlike any other. A wine that makes you sit up and pay attention. And we love it at Vivino!

If you have a passion for Fino or Manzanilla, this is a white wine for you. But if you have any love for complex, dry, mineral whites, we highly recommend you try it.

About the wine

An immensely pretty, bright pale yellow wine in the glass, chalk and citrus notes are evident at first, followed by scents of white flowers, nuts and hay that emerge with some air (slightly reminscent of Manzanilla). But the palate is where this wine truly excels. At first the texture is more noticeable, buttery and mouth-filling but as you drink the wine the complexity of the palate emerges. With layers of roasted almonds and candied fruit allied to an almost 'flor' like, yeasty quality, the wine is intensely concentrated and everything merges with a refreshing, salty tang that carries onto the long, long finish. Wow. Unlike any other dry white I can think of! A must-try for any sherry-lover...

To make Cuadrado, after harvesting the grapes are gently pressed before being fermented in old sherry casks that were previously used for the production of Manzanilla Pasada. The wine is then left in contact with its fine lees for six months. The use of sherry casks gives the wine a very distinctive ‘flor’ quality and whilst the wine is not fortified, there is an undeniable ‘sherry’ quality to the wine.

About the winery

Established in 1792, Bodegas Hidalgo is one of the oldest sherry producers in existence and widely regarded as the definitive Manzanilla house. Passed down from generation to generation, continuity and quality have always been the most important themes for the company, which today uses only grapes from their own vineyards in Jérez Superior.

About the vineyard

Within the El Cuadrado estate, in the sought-after district of Balbaina Alta, there are 12 hectares of 70 year old palomino vines, planted on the limestone-rich Albariza soils. It is the fruit from these vines that make this unique wine.

The characterful white 2016 Las 30 del Cuadrado is an unfortified Palomino fermented in old Manzanilla casks, a style that wants to revive the wines from yesteryear, so it has some of the flor notes of a Manzanilla with nuts, esparto grass, hay and straw. The grapes come from the Los Cuadrados lieu-dit from the Pago Balbaína Alta which express the character of the limestone-rich Albariza soils. The palate is dry with pungent flavors that bring back the notes found on the nose, quite intense and persistent"

  • Once a shipment arrives at the gateway*, it will be transferred to UPS or Fedex for the final part of its journey

All orders placed before 1pm EST on Wednesday will be shipped out on Friday of the same week. All orders placed after this time will be stored in a temperature controlled warehouse and shipped out the following Friday.

Delivery times, therefore, may take 8-14 days from order date, accounting for fulfillment, 4-5 days shipment to the regional hub, and 1-2 days for local delivery.

If you would like a more expeditious delivery option, please select 2-Day or Overnight Shipping.


Tracking information will not be available for your shipment until it reaches the regional hub, due to the fact that the shipment is sent via common (temperature controlled) carrier and there is no individual tracking number for the package.

You will however receive a confirmation email indicating that your shipment has left the West Coast warehouse and is en route to your closest regional hub. Your order will say "UPS Label Created", but this label will not be scanned until it reaches the regional hub.

Once the shipment reaches the regional hub, you will be able to track your package (likely 4-5 days after shipping date). At this point, the package is en route to your home/office.
